High degree intelligent fermentation by computional process control

Due to challenges of quality market a few years ago our company launched out on an enterprise with specialists of vineries and informatics.

With more than two-year generative work we managed to create a computational supervisory and process control system (developed for quality-vineries) that first of all achieves the intelligent control of directed fermentation technology. Thanks to the software and hardware (developed by own) there are no obligations, the system is becoming unique and factory-specific that suits the technology of all kinds of vineries.

This is a dynamically variable intelligent control system, which conforms all-time microbiological peculiarity of the product, hereby it permits of the softest and the safest treatment at the same time, avoiding the development of an occuring irreversible detrimental process.

We designed the system through the aspect of vinery specialist. Its appearance is nearest approach to animated computer games, but behind play-table there is a very serious process control system. Computational knowledge is no required to handling because the build of menu is unequivocal and logical. The usage is easy of attainment for a common man.

The complete guidance is controlled by the central industrial computer, which was developed for this function. Everything is connected to this computer, the input and output signs, which control the system on the grounds of a predefined logic. The equipment contains an IBM compatible PC, Windows-based user panel that functions by the right of the intelligent windowing-method. It comprehends the realistic spatial portrayal of the appliance and technology, its technological flow diagram together with the windowing-method, which is necessary to regulation. On flowsheet that appears on screen, we can follow up the actual guidance procedure. Clicking on the proper icon there is opportunity to interfere or get data.

Facilities of computational control without claiming completeness:

  • Control temperature of all tanks;
  • Storage of predefined procedures, adjustments in function of time and temperature;
  • Alerting (locally or by phone, even by sending sms);
  • User list, authority, noting interference activity;
  • Fact-finding, recording analysis;
  • Distant access facility (from local network or interference by a distant phone through a modem and computer, query);
  • Putting in and querying fermentation diagrams;

  • Observe outer (outdoor) and internal (ferment room) temperatures;
  • Connecting other signaller and control units to the system (safeguarding and fire-service, detection of must-gas, airing. etc).

Fermentation process can be solved per tank (or sort) by a preset diagram. This product controls the system in a preset real time- and temperature-function, preprogrammed to any period. It is definable for how long, what time and when it should heat or cool. After reaching the right temperature it is also definable how long the must should keep it and what temperature is should have afterwards. This is a possibility to control fermentation process even after a prespecialized curve. After a preset technological cycle (or inbetween) it is sending to the monitor a reminder to get prepared for the following interference (for example: Attention! Tomorrow yeast needs to be added to the fifth tank!). After interference program can be receipted.

With upper solution an optimal fermentation process can be achieved, with this help the possibility to manufacture a quality product increases, because the function of finished time and temperature can be reviewed at any time (it can be printed in graph form). After the audited lab results conclusions can be jumped.

In case of quality market or export output this kind of certification can be already needed. After entering EU and integrating in quality-insurance (ISO, HACCP) it will be indispensable. Assigning policy levels it is possibly that only the person knowing the right code can change the rates.

All incoming process can be archivated, so it can be audited, researched at any time.

There is a possibility to connect the internet, so the factory can be reached from anywhere. The set rates are available and changeable if necessary, even from thousands of kilometres.
